Rick’s Cherry Sumac Vinaigrette

One of my favorite experiences at the Stonestown Farmers Market is hearing what people do with Hazaa's products after they get them home.

Sometimes it’s what I imagined.

More often, it’s something unexpected .

Rick is a fellow volunteer at the Stonestown Farmers Market. I shared a jar of our Tart Cherry + Sumac Preserves with him. The following week Rich shared that he’d turned our Tart Cherry + Sumac Preserves into a salad dressing. The combination sounded so good I immediately wrote it down.

It’s bright, tangy, just a little sweet, and has enough body to cling beautifully to greens.

I love this improvisation!

Cherry Sumac Vinaigrette

Makes about ¾ cup

Ingredients

  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Hazaa Tart Cherry + Sumac Preserves
  • 1 teaspoon Dijon mustard
  • Pinch of kosher salt
  • Freshly ground black pepper, to taste

Directions

Combine everything in a small bowl or jar.

Whisk (or shake) until smooth and emulsified.

Taste and adjust. Add another spoonful of preserves if you’d like it sweeter or fruitier, or a splash more vinegar for additional brightness.

Serve immediately or refrigerate for up to one week. Shake well before each use.

What to Serve It With

This vinaigrette is especially good on:

  • Peppery arugula
  • Mixed baby greens
  • Spinach
  • Goat cheese or feta
  • Toasted pistachios or walnuts
  • Grilled chicken
  • Roasted beets
  • Fresh cherries when they’re in season

The tart cherries provide fruit without overwhelming sweetness, while the sumac contributes a bright, citrus-like acidity that makes the dressing taste surprisingly fresh.
